Ingredients

  • 7 ounces chopped bacon
  • 1 chopped scallion
  • 1 tomato, seeded and diced
  • 1 cup almond flour 
  • 1 tsp baking powder
  • salt and pepper (to taste)
  • 1/2 cup sour cream
  • 2 eggs large
  • 1 cup cheese, grated (your favorite)

Instructions

  • Preheat oven to 320 degrees Fahrenheit.
  • Fry the chopped bacon in a frying pan until browned and then reduce heat to medium and add the. Set aside to cool
  • Stir the eggs and sour cream together in a small bowl
  • In another bowl combine almond flour, baking powder, cheese, and salt & pepper
  • Combine wet ingredients to the dry mixture and stir until all combined. 
  • Finally add the bacon, scallions, and tomato to the mixture
  • Divide mixture between your muffin molds
  • Bake in the oven for 20-25 minutes or until they are golden brown and cooked through
