Avocado Egg Breakfast Sandwich

Good morning and welcome to your weekend! One of the best things about a lazy Saturday or Sunday morning is being able to enjoy a delicious breakfast. But let's be honest—simply cooking eggs can get boring after a while. What if there was an easy way to spice up the classic egg breakfast sandwich? With avocado, you don't have to sacrifice flavor for convenience anymore! In this blog post I'm going show you how make an incredibly tasty and simple egg sandwich with avocado that will make any weekend morning just that extra bit special. So grab your favorite skillet and get ready for some scrumptious egg-action—let's cook together!


  • 2 slices of whole wheat sandwich thins
  • 1 ripe avocado, halved and pitted
  • 1 egg
  • Salt and pepper to taste
  • Optional seasonings (garlic powder, chili powder, cumin)
  • Olive oil or butter for cooking
  • Optional garnishes (cilantro, jalapeno peppers, sun dried tomatos)


  1. Heat a small skillet over medium heat and add a teaspoon of olive oil or butter. Crack two eggs into the pan and season them with salt and pepper. If desired, add any additional seasonings such as garlic powder or cumin. Cook for 5 minutes until the whites are cooked through then remove from heat.
  2. Toast two slices of whole wheat bread in a toaster or on the stovetop in a lightly greased skillet. Spread one side of each slice with half an avocado per slice. Sprinkle with salt and pepper if desired.
  3. Place one egg onto one slice of toast topped with avocado and top it off with the remaining slice of toast (avocado side down). Cut in half for easier eating or serve as a whole sandwich!
  4. Serve the sandwich hot with optional garnishes such as fresh cilantro leaves or jalapeno peppers if desired. Enjoy!
