Keto-Friendly Cupcakes with Vanilla Icing

Here is a recipe for keto cupcakes that you can try:

Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter, melted
  • 1/2 cup stevia or other keto-friendly sweetener
  • 3 eggs
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (180°C). Line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the almond flour, coconut flour, cocoa powder, baking powder, and salt.
  3. In a separate large bowl, whisk together the melted butter, stevia, eggs, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients and stir until well combined.
  5. Divide the batter evenly among the cupcake liners, filling each about 3/4 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cupcakes cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.

Now time for the frosting

Ingredients:

  • 1 cup powdered stevia or other keto-friendly sweetener
  • 3 tbsp unsalted butter, softened
  • 1 tsp vanilla extract
  • 2-3 tbsp heavy cream

Instructions:

  1. In a medium bowl, beat together the powdered stevia and butter until well combined.
  2. Add the vanilla extract and 2 tablespoons of heavy cream. Beat until smooth. If the icing is too thick, add an additional tablespoon of heavy cream and beat until desired consistency is reached.
  3. Spread the icing over the top of your cupcakes or other baked goods. Enjoy!

Note: This icing will be quite sweet.If you prefer a less sweet icing, you can reduce the amount of stevia used or add a pinch of salt to balance out the sweetness.
