Ingredients
For the Crust
- 1/2 cup almond flower
- 2 tbsp melted butter
- 1 tbsp. sweetener
- 1/4 tsp. cinnamon
- pinch salt
For the Cheesecake

Make the Crust. Mix almond flour, butter, sweetener, and cinnamon in a large mixing bowl.

Press. Push the crust mixture into about 12 parchment lined muffin cups in a muffin tray.

Make the Cheesecake. Throughly mix together Giant Keto Cheesecake Mix and sugar free cool whip until fluffy. Add the egg. Mix all ingredients.

Fill the Muffin Cups. Add the cheesecake batter to the prepared muffin cups (fill them to almost full, leaving a tiny space incase of any spillage)

Bake. Bake keto mini cheesecake bites until center is just slightly jello-like at 350°F for 18-20 minutes

Chill. Allow the keto mini cheesecake bites to cook for about 45 minutes in the muffin pan

Remove and decorate. Carefully remove the keto mini cheesecake bites from the muffin tin and garnish with desirable toppings (fresh strawberries and blueberries).
