IngredientsÂ
Cake Batter- layer 1
- 2 scoops of Giant Sports Keto Cheesecake
- 1 tspb. of vanilla sugar free instant Jell-O pudding mix
- 1/2 tsp. of baking powder
- 1/3 cups of egg whites
- 1/2 tbsp. of vanilla extract
- 1/4 cup of whole wheat pastry flour
Vanilla Frosting- layer 2
- 1 packet of natural sweetener (such as stevia or truvia)
- 1/4 cups of non-fat plain Greek yogurt
- 1/2 tsp. of pure vanilla extract
Vanilla Hard Shell- layer 3
- 1Â cup of white chocolate chips (can be unsweetened)
- 1 tsp. of coconut oil
- Bakerpan Cake, Cookie Decorating Writing Gel, 1.5 Ounce Tube (Black)
InstructionsÂ
- Preheat the oven to 350°F
- Using a large bowl, throughly mix together all the cake batter (layer 1) ingredients until you achieve a cake batter constancy
- Spray the pan with non-stick cooking spray
- Pour the cake batter into a 6inch cake pan (we recommend a rounded pan, but it’s not necessary)
- One the oven reaches the required temperature, place the pan in the over and bake for about 20-25 minutes
- Take out the pan and allow to cool in the freezer for about 10 minutes
- While we allow the cake batter to cool, we’ll go ahead and start mixing together all the frosting ingredients (layer 2) in a large bowl
- Once the cake batter has cooled down, scoop out the cake batter and gradually mix together with the frosting ingredients (you may use a whisk or your hands to mix)
- Roll the mixed ingredients into 9 small balls
- Line a cookie sheet pan with non-stick parchment paper
- Evenly spread out the balls onto the cookie sheet pan
- Place in the freezer for about 10-25 minutes allowing the balls to harden
- While we allow that to cool, we’ll begin the next step. Place the white chocolate chips and coconut oil into a medium size bowl, mix, then place into the microwave for about 25-30 seconds (you may need to stir and place back into the microwave for an additional 10 seconds).
- Place a small wooden stick into each of the 9 cake balls
- Hold the end of the stick and cover the cake balls into the melted chocolate chips.
- Heres the fun part, decorating! Using a small spoon, scoop up some melted chocolate chip mix
- Drizzle onto the cake batter in a back-and-forth motion (we recommend doing this about half a ruler length away from the cake bites)
- Using the bakerpan, dot on two black eyes
- And that’s a wrap! Your mummy cake pops are ready to dance the night away.
