Easy Protein Breakfast Muffins That are 1 Low-Carb and 2 Keto Friendly

  • 7 ounces chopped bacon
  • 1 chopped scallion
  • 1 tomato, seeded and diced
  • 1 cup almond flour 
  • 1 tsp baking powder
  • salt and pepper (to taste)
  • 1/2 cup sour cream
  • 2 eggs large
  • 1 cup cheese, grated (your favorite)


  1. Preheat oven to 320 degrees Fahrenheit.
  2. Fry the chopped bacon in a frying pan until browned and then reduce heat to medium and add the. Set aside to cool
  3. Stir the eggs and sour cream together in a small bowl
  4. In another bowl combine almond flour, baking powder, cheese, and salt & pepper
  5. Combine wet ingredients to the dry mixture and stir until all combined. 
  6. Finally add the bacon, scallions, and tomato to the mixture
  7. Divide mixture between your muffin molds
  8. Bake in the oven for 20-25 minutes or until they are golden brown and cooked through
