Ingredients
Filling
- 2 scoop of GSI Keto cheesecake mix
 - 3 eggs
 - 1 can evaporated milk
 - Zest of two limes and juice of one lime
 - 1 teaspoon vanilla extract
 
CRUST
- 2 cups almond flour
 - 3 tbsp melted butter
 - ½ tsp salt
 - ½ tsp vanilla extract
 - 1 egg
 
Instructions
- Preheat oven to 350°F.
 - Grease the bottom and sides of a 9x13 inch baking dish with nonstick cooking spray.
 - In a medium bowl, combine the almond flour, salt, and xanthan gum.
 - Pour into the prepared baking dish and spread evenly over the bottom with a spatula or spoon.
 - Add egg and melted butter. Stir until everything is combined. Form dough into a ball and press into a standard 9-inch pie dish. Put in the fridge to chill.
 - Beat together the egg whites in a separate bowl.
 - In a separate bowl, blend together eggs, evaporated milk, lime zest, lime juice, vanilla extract, and keto cheesecake scoop until thoroughly combined.
 - Pour over prepared crust in the baking dish.
 - Bake in preheated oven for 30 minutes or until golden brown on top. Allow to cool completely before adding toppings such as whipped cream or ice cream if desired! Enjoy!
