Keto-Friendly Key Lime Pie

This delicious Low-Carb, Keto-friendly Key Lime Pie is made with GSI Keto Cheesecake Mix and has a sweet, tangy lime flavor that will tantalize your taste buds. This easy-to-follow recipe is packed with flavor and nutrition; the naturally sweet flavor of lime juice, combined with real cream cheese from our delicious Keto Cheesecake Mix, and a low carb almond flour crust make for a delightfully creamy and tart dessert. This combination of tart citrus and creamy sweetness makes this low carb key lime pie the perfect dessert for anyone striving to keep their carbs low while also satisfying their sweet tooth.

Ingredients 

Filling

  • 2 scoop of GSI Keto cheesecake mix
  • 3 eggs
  • 1 can evaporated milk
  • Zest of two limes and juice of one lime
  • 1 teaspoon vanilla extract

CRUST

  • 2 cups almond flour
  • 3 tbsp melted butter
  • ½ tsp salt
  • ½ tsp vanilla extract
  • 1 egg

Instructions  

    1. Preheat oven to 350°F.
    2. Grease the bottom and sides of a 9x13 inch baking dish with nonstick cooking spray.
    3. In a medium bowl, combine the almond flour, salt, and xanthan gum.
    4. Pour into the prepared baking dish and spread evenly over the bottom with a spatula or spoon.
    5. Add egg and melted butter. Stir until everything is combined. Form dough into a ball and press into a standard 9-inch pie dish. Put in the fridge to chill.
    6. Beat together the egg whites in a separate bowl. 
    7. In a separate bowl, blend together eggs, evaporated milk, lime zest, lime juice, vanilla extract, and keto cheesecake scoop until thoroughly combined.
    8. Pour over prepared crust in the baking dish.
    9. Bake in preheated oven for 30 minutes or until golden brown on top. Allow to cool completely before adding toppings such as whipped cream or ice cream if desired! Enjoy!
    10. Optional: Add a small, spoon size amount of sugar free cool whip to top it off!
